Raw Cherry Ripe Slice



Base
10 dates
1 cup oat bran
1 cup shredded coconut
2 tbs rice malt syrup
1 tbs chia seeds
2 tbs cacao powder

Cherry Layer - from @liveloveeatraw on instagram
2 cups fresh cherries or frozen
fresh juice of 1 small lemon
1 tbsp coconut water
3 cups shredded coconut
1 tbsp rice malt syrup
1 cup raw cashews (soak them for at least 2 hours)
1 tbsp chia seeds

Chocolate Topping
1/4 cup cacao powder
1/2 cup melted cacao butter
1/4 cup maple syrup

1. Combine all base ingredients in food processor and process until crumbly dough (I add a little water if it's not sticking together).
2. Push down in slice tin and set in freezer.
3. Combine all cherry layer ingredients in food processor and process until combined well. Push down in slice tin on top of the base. Set in freezer for at least half an hour.
4. Mix together the chocolate topping and use a spoon to spread over your slice.
5. Freeze for half an hour before cutting it up. Store in the freezer.
