Jaffa Cacao Chip Biscuits
1 large orange
rind of an orange
1/3 cup coconut oil
1 tbsp milk
3/4 tsp vanilla extract
1 cup plain flour
1/4 cup oats
1/4 tsp baking soda
1/2 cup cacao nibs (or choc chips)
1. Preheat oven to 160ÂșC
2. Line a tray with baking paper.
3. Grate the rind of the orange and then peel the orange and cut it up. Add the rind and the cut up orange into a blender and blend until a smooth juice has formed. Measure out 2/3 cup and place in a large bowl.
4. Add coconut oil, milk and vanilla to the bowl and whisk until combined.
5. Add flour, oats, baking soda and mix until combined. Fold in the cacao nibs.
6. Drop teaspoons of dough onto the baking paper.
7. Bake cookies for about 14 minutes or until the edges are golden.
