Blueberry & White Chocolate Muffins


✦ Makes 12 standard size muffins or about 15 smaller muffins in the baking cups (in image above)

Ingredients
◇ 1 cup blueberries (or raspberries)
◇ 2 cups SR flour
◇ ¾ cup brown sugar
◇ ½ cup white choc chips
◇ 1 egg lightly beaten
◇ ¾ cup buttermilk
◇ ½ cup veg oil

Method
1. Preheat oven to 180°c (fan forced).
2. Place dry ingredients into a bowl and mix.
3. Stir in buttermilk, egg and oil.
4. Gently fold through blueberries or raspberries. I find it easier to just poke some in after spooning into papers to avoid mixture turning the colour.
5. Bake for 25 to 30 minutes.
