Apple & Cinnamon Wholemeal Muffins
✦ Makes 12 standard size muffins or about 15 smaller muffins in the baking cups (in image above)
✦ Variation of original recipe - Banana & Blueberry Wholemeal Muffins
Ingredients
◇ 2 cups wholemeal self-raising flour
◇ ½ cup self-raising flour
◇ 1 teaspoon ground cinnamon
◇ ½ cup brown sugar
◇ 1 cup apple puree
◇ 1 teaspoon vanilla extract
◇ 1 egg, lightly beaten
◇ 1 ¾ cups apple cinnamon yoghurt
◇ ¼ cup extra-light olive oil
◇ little bit of butter, cinnamon and sugar to sprinkle on top
Method
1. Preheat oven to 190°c (170°c fan-forced).
2. Combine flours, cinnamon and sugar in a large bowl. Make a well. Add apple puree, vanilla, egg, yoghurt and oil. Stir until just combined. Spoon into paper cases.
3. Bake for 20 to 25 minutes. Stand in pans for 2 minutes. Transfer to a wire rack to cool and spread a little bit of butter on the top and sprinkle lightly with cinnamon and sugar.
