So since I messed up the icing the first time, I thought I would try again! This time trying out the Chocolate Cupcake Recipe from Glorious Treats! The recipe makes an extremely thin mixture, I used an ice cream scoop to scoop it into a measuring jug to pour into the liners. I made 12 standard cupcakes and 12 mini ones with mixture left over still.
Some of them started to peel out of their liners. I think this was due to the standard size cupcakes not rising very much for me.
So with the left over mixture I made 6 more and filled them up more (about 1/2cm from the top) and they turned out much better even though they sunk in the middle, covered it up with icing anyway!
With the icing, I used the Cream Cheese Frosting again. This time using regular Cream Cheese and the constancy turned out much better. I put it in the fridge for about 30 minutes before piping onto the cupcakes. For info on the marshmallow fondant flowers or anything else I've missed out, see first blog post here.
