1 cup smashed roasted pumpkin
2 cups wholemeal flour
1/2 cup raisins
1/2 teaspoon ground cinnamon
2 teaspoons baking powder
1/4 cup macadamia nut or coconut oil
1 tablespoon manuka honey or pure maple syrup
1/2 cup oats for rolling
1. Preheat your oven to 180C.
2. Combine flour, cinnamon and baking powder.
3. Add raisins and mix through.
4. Combine smashed roasted pumpkin with the manuka honey and oil.
Add smashed pumpkin mix to the flour.
5. Combine gently with your fingertips until a soft dough forms and mixture is combined.
6. Scatter the oats on the base of your chopping board then scoop out your scone dough onto the oats.
7. Flatten out the pumpkin scone dough to about 5 cm, scattering some extra oats on the top if you need to so it doesn’t stick.
8. Cut up into scones.
9. Place the scones onto a baking tray – I got 18 scones
10. Bake for approximately 20 minutes until golden and cooked through.
