Raw Coconut Slice
Base
10 dates
1 cup oat bran
1 1/2 cups shredded coconut
2 Tbs rice malt syrup
2 Tbs raw cacao powder
2 Tbs Chia Seeds
Coconut Layer
1 cup raw cashews (soak them for at least 2 hours)
3 cups shredded coconut
2 tsp vanilla extract
1/3 cup rice malt syrup
2 tsp coconut water
Chocolate Topping
1/4 cup cacao powder
2/3 cup cacao butter (or coconut oil but I prefer the cacao butter as it gives a less rich/dark taste)
1/4 cup maple syrup
1. Combine all base ingredients in food processor and process until crumbly dough (add a little water if it's not sticking together).
2. Push down in slice tin and set in freezer.
3. Combine all coconut layer ingredients in food processor and process until combined well. Push down in slice tin on top of the base. Set in freezer.
4. Mix together the chocolate topping and use a spoon to spread over your slice. It will set as you're doing it so do not pour onto slice all at once.
5. Freeze for half an hour before cutting it up. Store in the freezer.
