Raw Mint Slice
Base
1 cup oatmeal
3 tbs rice malt syrup
1 tbs chia seeds
2 tbs cacao powder
4 tbs water

1 cup soaked cashews
1/4 cup dessicated coconut
1/2 cup milk
1/4 cup coconut oil
1 cup spinach
2 tsp peppermint extract
Chocolate Topping
1/4 cup cacao powder
2/3 cup cacao butter (or coconut oil)
1/4 cup maple syrup
1. Combine all base ingredients in food processor and process until crumbly dough.
2. Push down in slice tin and set in freezer.
3. Process cashews, coconut, milk and coconut oil until smooth Add spinach and extract until leaves have fully blended. Push down in slice tin on top of the base. Set in freezer.
4. Mix together the chocolate topping and use a spoon to spread over your slice. It will set as you're doing it so do not pour onto slice all at once.
5. Freeze for half an hour before cutting up. Store in the freezer.
