Apple Cinnamon & Raisin Muffins

2 cups plain flour
2 tbsp cinnamon
1 tsp bi-carb soda (baking soda)
½ cup milk
1 tbsp apple cider vinegar
2 tbsp melted coconut oil
⅓ cup maple syrup
1 cup applesauce/puree
1 cup raisins
½ cup diced apple

1. Pre-heat oven to 180ºc (160ºc fan forced)
2. Mix together all the dry ingredients in a bowl.
3. Add in the wet ingredients
4. Mix together until just combined.
5. Spoon into 12 muffin papers.
6. Bake for about 18 minutes.
