Apricot, Raisin, Coconut Biscuits

Makes about 20 biscuits.

1/2 cup dessicated coconut
2 tablespoons sunflower seeds
2 tablespoons oat bran
1/3 cup rolled oats
1/2 cup dried apricots
1/2 cup raisins
1 teaspoon vanilla extract
4 medjool dates
2 tablespoons cashew butter
1 tablespoon maple syrup

1. Preheat oven to 100°c.
2. Place all ingredients into a food processor and process until sticky mixture.
3. Line a baking tray with paper and roll teaspoon sized balls and place onto tray.
4. Gently press down and bake in the oven for approx 30 minutes.
5. Keep in an airtight container in the fridge. These will last a week.
