*This recipe makes about 6 pancakes, it can easily be doubled!
1 cup wholemeal self raising flour
1/2 teaspoon cinnamon
1/2 cup buttermilk
1/4 cup apple juice
1 egg
1/2 cup apple puree
1. Place flour and cinnamon in a large bowl.
2. Add wet ingredients altogether in small measuring jug or just a small bowl and then mix with whisk.
3. Pour into flour mixture and combine. Add extra buttermilk if necessary.
4. Cook in a medium heated fry pan. I cooked them for about 3 minutes each side.
