New healthier version of this Date Loaf Recipe here. I've replaced the sugar in the original recipe with 1/3 cup Norbu Sweetener. Norbu is a 100% natural sweetener that harnesses the clean sweet taste of Monk Fruit. It is a low calorie alternative to artificial sweeteners and sugar. As for taste difference, it's much of the same in this date loaf. I didn't notice any distinct flavour change, it's just better for you and still tastes yum! Double the goodness :)

1 cup medjool dates, chopped
1/3 cup Norbu Sweetener
2 teaspoons butter
1 heaped teaspoon ginger
1 teaspoon bi-carb soda
1 1/2 cup SR flour (you may use wholemeal SR flour)
1. Preheat oven to 180°c/160°c fan forced.
2. Place all ingredients except flour in a bowl.
3. Pour on 3/4 cup boiling water then sift flour in.
4. If you feel the mixture is too thick, add a little more water before spooning into a small loaf tin.
4. Bake in a moderate oven for about 45 minutes.
