1 cup macadamia nuts
1 cup cashews
1/2 cup shredded coconut
2 tablespoons flaxsead meal
4 tablespoons cacao powder
7 medjool dates
1 teaspoon cinnamon
4 tablespoons coconut oil
1/2 cup freshly squeezed orange juice
2 tablespoons sweetener of choice (honey, maple syrup)
zest of 1 orange
dessicated coconut
1. Place macadamia nuts and cashews in a food processor and blitz until you get them finely ground. Don’t overdo it as they’ll quickly start turning into butter.
2. Scoop out into a bowl and add the rest of the ingredients.
3. Mix all by hand until you get a soft, gooey consistency.
4. Make small balls and place them in the fridge to firm up.
5. After about 30 mins, coat them in coconut to serve.
