Ginger & Maple Biscuits

 *Modified a little by swapping almonds for cashews.

1 1/2 cups oats
1/2 shredded coconut
1/2 cup cashews
1 1/2 tablespoons coconut oil
2 tablespoons maple syrup
1 teaspoon vanilla extract
1 tablespoon ginger
1/2 teaspoon nutmeg
1 tablespoon water

1. Preheat oven to 150 degrees.
2. Combine oats, coconut and cashews in a food processor.
3. Add oil, spices, maple syrup, vanilla and blend until well combined.
4. Add water and process until dough forms.
5. Roll into teaspoon sized balls and flatten on a baking tray.
6. Bake in the oven for about 20-30 minutes or until golden.
