*Changed almond meal to wholemeal plain flour
2 cups wholemeal plain flour
1 tbsp flaxseed meal
1 tsp cinnamon
1/2 tsp bi carb soda (baking soda)
4 eggs
1 tsp vanilla extract
1 large red apple
1/2 cup dried apricots
1/4 cup raisins
1/4 cup walnuts
1 tbsp honey
1. Preheat oven to 160 degrees (fan forced).
2. Mix flour, cinnamon, bi carb and flaxseed.
3. Add eggs, honey and vanilla and mix.
4. Add apple, dried fruit and walnuts.
5. Mix well - it will be very chunky, full of fruit.
6. Spoon into a medium size loaf tin.
7. Bake for about 40 minutes or until golden (about 30 minutes for me)
8. Store in the fridge in an airtight container for up to 4 days.
